I was using cathedral for awhile with a few different enbs and interior lighting mods but I ended up switching to NAT enb and weather with window shadows for interiors and it's much better than anything else I've found. If you really want to stay on cathedral though I'd highly recommend A Cathedralist's ENB 2020.

Apr 12, 2020 · Download Nolvus reshade from the main files section (according to the weathers mod and ENB you choose) and extract the file "Nolvus Reshade.ini" inside your Skyrim folder (where SkyrimSE.exe is located) Click on "Continue". Select Nolvus Reshade.ini. Click on "Continue" until you see this screen and click "Finish".
The ENB ({Rudy ENB for Cathedral Weathers}) definitely needs some tweaks to night and interior brightness depending on the interior lighting setup you choose, and make sure to back SSAO way down to 0.05 (or eliminate it entirely if you choose), and some weathers still don’t look quite right with our lack of volumetric lighting. I'd say this is for people who want a colder, darker experience than you get with Rudy's Cathedral enb for VR. It also has way more active weathers.
